Meatless Meatloaf

Ingredients:
 12 slices of whole wheat bread, toasted
2 cups walnuts, chopped
4 large eggs
2 medium onions, sliced
1/4 cup oil
1 small green bell pepper, chopped
1/4 cup dried parsley
1 16 oz. can of diced tomatoes, roasted garlic and onion flavor
2 packets of George Wastington Seasoning and Broth, Dark
1 tsp. salt
1tsp. black pepper (optional)
1 small can of condensed cream of mushroom soup

Instrcutions:
 Preheat oven 375 degrees. Tear toasted wheat bread slices in to small pieces and place into bowl of food processor. Whiz until fine bread crumbs. Place crumbs into large mixing bowl.

Process chopped walnuts until finely ground. Add to bread crumbs.

Add bell pepper, parsley, tomatoes, salt, pepper and oil to processor and whiz until fine, but not pureed. Add this mixture to nuts and bread crumbs.

Place eggs and chopped onions in processor and grind until fine, but do not puree onions. Pour into bread crumb mixture.

Empty George Washington Seasoning packets and can of mushroom soup into mixture and stir all ingredients until well combined.

Pour into a well greased extra large loaf pan or 9 x 13 casserole. Make a 1 inch wide, 1/4 inch deep well along center length of loaf. Into a liquid measuring cup, pour 3/4 cup ketchup. Add 1/4 cup of Karo syrup or your favorite maple like syrup. Stir until combined and pour mixture into well on the loaf. Spread the ketchup topping evenly. Bake for 1 1/2 hours or until knife in center comes out clean.
