2 C flour
1 T soy flour
1/2 C sugar
2 t baking powder
1/2 t salt
2 t cinnamon
1/4 C oil
1 C rolled oats
1/2 C raisins
1 C soymilk
In a small bowl, combine soymilk, oats and raisins. Leave to soak for about 10 minutes so the oats and raisins start to soften. In another bowl,combine all the dry ingredients. Make a well in the center. Pour the oat combination and the oil into the well and stir to combine. Bake at 400 degrees. Mini muffins will take 10 minutes; regular size muffins take about 20 minutes. Recipe makes about 30 mini muffins or 1 dozen regular size muffins.
