I baked these in a mini muffin pan and brought them for Sabbath School this week. Everyone loved them!
2 1/2 C flour
1 T soy flour
1/2 C sugar
3 t baking powder
1/2 t salt
6 t spices (combination of cinnamon, ginger, nutmeg and cloves in whatever balance you prefer)
1 can pumpkin puree
1 C orange juice
Combine all the dry ingredients in a bowl. Form into a well, add pumpkin puree and orange juice into the well. Stir gently to combine. Spoon into muffin tin. Bake at 400 degrees. Bake mini muffins for 10 minutes; regular size muffins will take about 20 minutes to bake. Makes 48 mini muffins or 1 1/2 dozen regular size muffins.
